It’s time to get spiralising! Try this courgette ‘spaghetti’ recipe for a delicious and quick dinner.

Ingredients

Calorie controlled cooking spray

Extra lean beef mince (5% fat), raw

500 g

Onion

1 large, finely chopped

Garlic

1 clove(s), crushed

Tinned Tomatoes

Passata

Yeast Extract

1 teaspoon(s), level

2 tablespoon(s), level

3 medium, large

Basil, fresh

5 leaf/leaves, to garnish

Instructions

  1. Mist a large saucepan with the cooking spray over a medium heat. Add the mince, onion and garlic and fry for 5 minutes until the mince is browned and the onions softened.
  2. Add the tomatoes, passata, Marmite, Worcestershire sauce, tomato purée and mixed herbs to the pan, stir well and bring to the boil. Crumble in the stock cube and stir again. Reduce the heat and simmer for 15-20 minutes, stirring occasionally, until the sauce has thickened.
  3. When the sauce is nearly ready, mist a large frying pan with cooking spray and add the spiralised courgette. Cook over a medium heat for 1-2 minutes until slightly softened. Season to taste, divide between plates and serve topped with the sauce and garnished with the basil.

Notes

For vegetarians, this would taste great with Quorn mince instead of beef and a vegetable stock cube. You can reduce the simmering time to 10 minutes. Remember to adjust the SmartPoints.
