This is so simple to put together, but look really special. Serve with vegetables of your choice, such as boiled new potatoes and peas

Ingredients

Courgette

2 medium

Haddock, raw

4 fillet(s), medium

Quark, fat free, plain

175 g

Fresh Vegetable Stock

2 tablespoon(s), level

Lemon Juice, Fresh

15 ml

Lemon

1 medium, cut into wedges

Dill, Fresh

1 tablespoon(s), chopped

Chives, Fresh

1 teaspoon(s)

Instructions

  1. Line the base of a plastic or hob steamer with baking paper. Put 3-4cm of water in the bottom pot of the steamer and bring to a simmer.
  2. Using a vegetable peeler, slice the courgettes into wide ribbons. Put a quarter of the courgette ribbons on a chopping board and lay out, slightly overlapping each other, so they’re wide enough to encase the fish fillets. Put a fillet on the courgette ribbons and wrap them to completely cover the fish. Put the parcel into the lined steamer and repeat with the remaining courgette ribbons and fish fillets.
  3. Steam the fish for 8-10 minutes, or until it has turned opaque and the courgette is just softened.
  4. Meanwhile, make the sauce. Put the quark in a small saucepan over a low heat and stir until melted. Stir in the stock, then remove from the heat and stir through the lemon juice, chives and dill. Season to taste. Serve the fish parcels with the sauce drizzled over, sprinkled with the extra herbs, with lemon wedges on the side.
