This vibrant salad is great on its own or eaten alongside grilled or barbecued meat or fish.

Ingredients

Courgette

2 medium, cut in ribbons

Calorie controlled cooking spray

4 spray(s)

Wholewheat Couscous, dry

75 g, soaked in boiling water according to the packet instructions

Mint, Fresh

10 g, small bunch, chopped roughly

Parsley, fresh

10 g, small bunch, chopped roughly

Spring Onions

3 medium, sliced finely

Green pepper

2 medium, deseeded and diced

Cherry Tomatoes

200 g, quartered

Lemon Juice, Fresh

40 ml

Olive Oil

1 tablespoon(s)

Pomegranate

30 g, seeds

Instructions

  1. Mist the courgette slices with the cooking spray and heat a griddle pan to hot. Griddle until lightly charred, then set aside to cool.
  2. Fork the soaked couscous to fluff it up, then add the herbs, spring onions, peppers and tomatoes and toss well.
  3. Mix the lemon juice with the olive oil and some seasoning. Pour over the couscous and mix through. Add the griddled courgettes and serve with the pomegranate seeds on top.
