Courgette & feta frittata

2 medium, raw
Light Feta Cheese
- Heat the oil in a 20cm nonstick frying pan and add the courgettes. Cook over a medium heat for 5 minutes until softened and slightly golden.
- Combine the eggs, milk and herbs and season well. Pour over the courgettes and cook over a low heat for 5 minutes. Scatter with the feta.
- Preheat the grill to medium and cook the frittata under the grill for a further 2 minutes until set and golden. Slice and serve with a crisp green salad.
