Preheat the oven to 180°C, fan 160°C, gas mark 4. Mist a 450g loaf tin with cooking spray and line with baking parchment.

Squeeze the moisture out of the courgettes. Set aside. Beat the low fat spread with the sweetener, orange juice and zest, and eggs. Sift in the flour, baking powder and spices. Stir in the courgettes. Transfer to the tin, bake for 20–25 mins, then cool on a rack. Beat the cheese with the icing sugar. Spread over the cake and decorate with the orange zest.
