Courgette bites with feta dip

Courgette
2 medium, grated
Mint, Fresh
4 sprig(s), chopped
Spring Onions
2 medium, chopped
Ground Nutmeg
¼ teaspoon(s), level, pinch of grated

1 tablespoon(s), level
Egg, whole, raw
1 large, raw, beaten
Breadcrumbs, dried
40 g, Panko breadcrumbs
Calorie controlled cooking spray

Fat Free Natural Yogurt

Light feta cheese

Put the grated courgette into a colander set over the sink and sprinkle with a little salt. Leave for 30 minutes then squeeze out excess water and put the courgette into a bowl. Preheat the oven to 200°C, fan 180°C, gas mark 6 and line a baking tray with baking paper.

Add the mint, spring onions, nutmeg and flour to the courgette, mix to combine, then season and stir in the beaten egg. Put the breadcrumbs into a bowl. Roll spoonfuls of the courgette mixture in the crumbs, then put on the prepared baking tray you’ll have enough for 24 bites.

Mist with cooking spray and bake for 25-30 minutes. To make the dip, blitz the yogurt and feta in a mini food processor then put in a bowl. Arrange on a platter and serve 4 bites per person.
