Courgette & cheese crisps

All you need is three ingredients to make these easy savoury snacks.
500 g, baby
25 g, vegetarian, very finely grated
- Preheat the oven to 120°C, fan 100°C, gas mark 1. Trim the courgettes, then thinly slice them lengthways into long, thin strips – use a mandoline if you have one, or simply cut as thin as you're able to with a sharp knife.
- Transfer the courgettes to a wire rack set over a large baking sheet, brushing them with the oil as you go. Line up the courgette strips side-by-side, so they are just touching.
- Season to taste, then scatter over the grated cheese. Bake for 1 hour 30 minutes until the courgettes are crisp and golden, then serve.
