Ingredients

Mango Chutney

2 tablespoons, heaped

0% fat natural Greek yogurt

150 g

Curry Powder

2 teaspoons, mild

Lemon Juice, Fresh

1 tablespoons

Lemon(s)

4 slice(s), wedges, to serve

Chickpeas, cooked

2 can(s), large, drained

Coriander, fresh

1½ tablespoons

Sultanas

25 g

Sourdough Bread

160 g

Rocket

40 g

Instructions

  1. Put the chutney, yogurt, curry powder and lemon juice into a large bowl and stir to combine. Add the chickpeas, coriander and sultanas, season to taste, and stir to combine.
  2. Toast the bread, then top each slice with the rocket followed by the chickpea mixture. Garnish with the extra coriander, then season to taste and serve with lemon wedges on the side.
