Coronation chickpea open sandwich

0% fat natural Greek yogurt
2 teaspoons, mild

1½ tablespoons, finely chopped fresh coriander, plus extra to serve
160 g, 4 x 40g slices
- Put the chutney, yogurt, curry powder and lemon juice into a large bowl and stir to combine. Add the chickpeas, coriander and sultanas, season to taste, and stir to combine.
- Toast the bread, then top each slice with the rocket followed by the chickpea mixture. Garnish with the extra coriander, then season to taste and serve with lemon wedges on the side.
