Coronation chicken baked potatoes
0% fat natural Greek yogurt
Lemon Juice, Fresh

Chicken breast, skinless, grilled
- Preheat the oven to 190°C, fan 170°C, gas mark 5. Prick the potatoes all over with a fork, then put on a baking tray and bake for 1 hour 15 minutes, until crisp on the outside and tender on the inside.
- Meanwhile, combine the yogurt, curry powder, lemon juice, mango chutney and sultanas in a mixing bowl, then season to taste. Stir in the shredded chicken and most of the coriander, until well combined.
- Split the potatoes and stuff with the coronation chicken mixture. Season to taste and scatter over the remaining coriander. Serve with the salad and lemon wedges on the side.
