0% fat natural Greek yogurt

250 g

Curry Powder

Chicken breast, skinless, grilled

Instructions

  1. Preheat the oven to 190°C, fan 170°C, gas mark 5. Prick the potatoes all over with a fork, then put on a baking tray and bake for 1 hour 15 minutes, until crisp on the outside and tender on the inside.
  2. Meanwhile, combine the yogurt, curry powder, lemon juice, mango chutney and sultanas in a mixing bowl, then season to taste. Stir in the shredded chicken and most of the coriander, until well combined.
  3. Split the potatoes and stuff with the coronation chicken mixture. Season to taste and scatter over the remaining coriander. Serve with the salad and lemon wedges on the side.
