Ingredients

Mixed Dried Fruit

1000 g

Instant Coffee

2 teaspoon(s), level, to make 500ml black coffee

White Self Raising Flour

300 g

Milk chocolate fruit & nut bar

150 g

Instructions

  1. Combine the dried fruit and coffee in a large heatproof bowl, then cover and set aside to soak overnight.
  2. Preheat the oven to 180°C, fan 160°C, gas mark 4. Line the base and two long sides of an 18cm x 26cm lamington pan with baking paper. Add the flour and chopped chocolate to the fruit mixture, stirring well to combine.
  3. Spread the mixture evenly into the prepared pan. Bake for 40 minutes or until a skewer inserted into the centre comes out clean. Let cool completely before serving.

Notes

This cake can be stored in an airtight container in a cool, dark and dry place for up to a month.
