Pop a few of these bites in your bag for a convenient energy boost when you’re on the go

Ingredients

Cashew Nuts

75 g

Ready to eat apricots (semi-dried)

75 g, chopped

Dates, dried

50 g, pitted and chopped

Artificial sweetener

1½ teaspoon(s)

Smooth Peanut Butter

1 tablespoon(s), heaped

Cocoa Powder

2 teaspoon(s), level

Desiccated Coconut

2 tablespoon(s)

Instructions

  1. Put the cashews, apricots and dates in a mini food processor and blitz until you have a coarse paste. Transfer to a bowl and stir in the sweetener and peanut butter to make a fairly stiff mixture. Roll the mixture out and shape into 14 equal balls.
  2. Put the cacao and coconut on separate small plates. Roll half the balls in cacao and half in coconut. Store in an airtight container in the fridge.
