Coconut & cocoa energy bites
Pop a few of these bites in your bag for a convenient energy boost when you’re on the go
Ready to eat apricots (semi-dried)
75 g, chopped
50 g, pitted and chopped
Smooth Peanut Butter
1 tablespoon(s), heaped
2 teaspoon(s), level
- Put the cashews, apricots and dates in a mini food processor and blitz until you have a coarse paste. Transfer to a bowl and stir in the sweetener and peanut butter to make a fairly stiff mixture. Roll the mixture out and shape into 14 equal balls.
- Put the cacao and coconut on separate small plates. Roll half the balls in cacao and half in coconut. Store in an airtight container in the fridge.
