Coconut, cardamom & blueberry porridge

- Put the porridge oats, coconut drink and 2 cardamom pods that have been squashed with a rolling pin until they’ve just split open in a small pan and set over a medium heat. Bring to the boil, then reduce the heat and cook, stirring, for 2-3 minutes until the oats are soft and the mixture is creamy.
- Once the porridge is cooked, stir in the blueberries and cook for a further minute until the berries start to soften.
- Remove and discard the cardamom and serve the porridge with 1 tablespoon coconut drink drizzled over the top.
