You won’t have to search hard to find clementines at this time of year, and Prosecco works just as well as Champagne in this refreshingly zingy cocktail
Lime Juice, Fresh
2 medium, 6 pieces of pared peel
Freshly squeezed orange juice
250 ml, clementines
400 ml, chilled
250 ml, chilled
- Place most of the mint (keeping a few leaves in reserve) and the lime juice in a large pitcher. Crush the leaves and stems to release the aroma with the end of a wooden spoon. Add ice and the clementine juice. Top with the Prosecco and ginger beer, and give it a good stir.
- Add ice to 6 long-stemmed wine glasses and divide the drink between them. To serve, twist the pieces of peel to sit on the edge of each glass and garnish with the remaining mint.
