Ingredients

Tinned Tomatoes

1 can(s), small

Red Wine

70 ml

Tomato Purèe

1 tablespoon(s), level

Garlic

1 clove(s), crushed

Oregano, Dried

½ teaspoon(s), level

Chicken Thigh, Skinless, Boneless, raw

300 g, 2 x 150g

Mushrooms

70 g, thickly sliced

Peppers, all types

1 medium, thinly sliced

Onion

1 small, chopped

Wholewheat Pasta, dry

120 g

Rosemary, Fresh

15 g

Lemon

½ zest(s) of 1

Instructions

  1. In a small (2-litre) slow cooker, stir together the tomatoes, wine, tomato purée, garlic and oregano. Season to taste, then add the chicken, mushrooms, pepper and onion, stirring to combine.
  2. Cover and cook for 2-3 hours on a high setting or 5-6 hours on a low setting, until the chicken is cooked through.
  3. Cook the linguine to pack instructions, then divide between plates. Top with the chicken cacciatore and serve garnished with rosemary and lemon zest.
