Citrus herb sauce

Spoon this sauce over everything from halved hard-boiled eggs to roasted vegetables and salmon fillets, as shown here.

Ingredients

Parsley, fresh

15 g, flat-leaf, chopped

Coriander, fresh

15 g, roughly chopped

Oregano, fresh

1 tablespoon(s), chopped

Shallots

1 medium, chopped

Vinegar, All Types

60 ml, red-wine vinegar

Freshly squeezed orange juice

Lemon

1 zest(s) of 1, grated

Garlic

2 clove(s), crushed

Salt

½ teaspoon(s)

Chilli flakes

1 pinch

Olive Oil

2 tablespoon(s)

Instructions

Put all of the ingredients except the oil, into the bowl of a mini food processor or a blender and blitz until you have a smooth sauce. With the food processor on, gradually drizzle in the olive oil, blitzing until well combined.

Spoon the sauce into a bowl and set aside to rest for at least 30 minutes. Transfer the sauce to a jar or airtight container, then seal and store in the fridge for up to 1 week.
