Pancake Day is one of our favourite times of year. Whether you like yours thin and crispy like these fritters, or fat and fluffy like our Dutch baby recipe, pancakes are the on-trend food to try, which means there’s more inspiration out there than ever!

White Self Raising Flour

125 g

Light Brown Sugar

1 tablespoon(s)

Ground Cinnamon

1 teaspoon(s), level

Semi Skimmed Milk

250 ml

Egg, whole, raw

1 medium, raw

Vanilla Extract

½ tablespoon(s), level

Calorie controlled cooking spray

4 spray(s)

3 medium, Braeburn apples, peeled, cored and cut into 5mm-thick rings (you’ll need 16)

0% fat natural Greek yogurt

125 g

  1. To make the batter, combine the flour, sugar and ground cinnamon in a large bowl, make a well in the middle, then set aside. Whisk the milk, egg and vanilla in a jug, then pour into the flour mixture and whisk until you have a smooth batter.
  2. Heat a large nonstick frying pan over a medium heat and mist with cooking spray. In batches, coat the apple slices in the batter and fry until golden brown, about 4 minutes per batch, flipping halfway through. Transfer to a baking sheet lined with kitchen paper to drain.
  3. Serve four apple ‘fritters’ per person, with the yogurt spooned over.
