Chocolate chunk oatmeal cookies

Soft and chewy with little explosions of dark chocolate, these oaty treats are perfect for when you fancy something sweet.


Ingredients
Butter
45 g
Light Brown Sugar
75 g
Plain White Flour
50 g
Baking powder
½ teaspoon(s), level
Porridge oats
70 g
Egg, whole, raw
1 medium, raw, lightly beaten
Vanilla Extract
½ teaspoon(s), level
Dark Chocolate
50 g, roughly chopped
Salt
1 pinch

Preheat the oven to 180°C, fan 160°C, gas mark 4. Line 2 baking sheets with greaseproof paper. Put the butter in a small pan and melt over a low heat. Add the sugar, and stir until dissolved.

Combine the flour, baking powder, and oats in a bowl with a pinch of salt, then add the butter and sugar mixture, egg and vanilla extract. Fold in the chopped chocolate.

Roll the mixture into 16 evenly sized balls and put them on the baking sheets, leaving plenty of space between them. Bake for 10-12 minutes or until golden, then cool on a wire rack.
