Olive Oil

Egg, whole, raw
2 medium, raw
Caster Sugar

Vanilla Extract

Sweet potato, boiled
375 g
Cocoa Powder
50 g
Biona Organic Coconut Flour
30 g
Baking powder
1 teaspoon(s), level
Bicarbonate of Soda
1 teaspoon(s), level
Walnut Halves

Instructions

Preheat the oven to 180°C, fan 160°C, gas mark 4. Lightly brush the base and sides of a 20cm square tin with oil then line with baking paper.

In a bowl, whisk together the eggs, sugar, oil and vanilla extract until combined. Add the sweet potato and continue whisking until smooth. Sift in the cocoa, coconut flour, baking powder and bicarbonate of soda, and stir until combined. Stir through the walnuts then pour the mixture into the prepared tin. Level the surface with a spatula and bake for 20 minutes.

Remove from the oven and leave to cool in the tin before dusting with the extra cocoa and cutting into 16 equal brownies to serve.
