A smoothie with everything going for it— packed with protein from peanut butter powder and tofu, with a serving of fruit (cherries) and vegetables (cauliflower) in one serving. And on top of it all, it has chocolate!

Ingredients

Cherries

210 g

Cauliflower rice

100 g

Unsweetened almond drink

240 ml

Peanut butter powder

24 g

French almond extract

¼ teaspoon(s)

Plain Tofu

85 g, firm

Cocoa Powder

3 tablespoon(s), level

Instructions

  1. Blitz all the ingredients (except for the cocoa powder) in a blender on high speed until smooth. Divide half of the smoothie between 2 pint glasses. Add the cocoa powder to the remaining smoothie in blender and blitz until cocoa is incorporated, for about 30 seconds. Dividing equally, gently pour the chocolate smoothie on top of the cherry smoothie in glasses so 2 layers form.

Notes

Why blend all the smoothie ingredients together when you can make layers instead? Make the smoothie base, and pour half of it between two glasses. Blend the cocoa powder into the remaining smoothie, and top of the glasses.
