Chilli tuna slaw
It’s crisp and crunchy coleslaw, but not as you know it!
Sweetcorn, canned, drained
½ individual, little gem lettuce, leaves shredded
200 g, red cabbage, shredded
100 g, halved
½ medium, thinly sliced
2 medium, trimmed and cut into matchsticks
Tuna in spring water, drained
1 can(s), medium, drained
2 tablespoon(s), chopped
Lime Juice, Fresh
2 teaspoon(s), light
Chilli, green or red
1 individual, deseeded and finely chopped
- Combine the sweetcorn, lettuce leaves, cabbage, tomatoes, pepper, radishes, tuna and coriander in a large bowl and set aside.
- In a small jug, whisk together the remaining ingredients to make a dressing.
- Drizzle the dressing over the salad and toss to coat. Divide between bowls and serve.
Like your dressing with a kick? Leave the seeds in the chilli before chopping it, for extra heat.
