Chilli tuna slaw

It’s crisp and crunchy coleslaw, but not as you know it!

Ingredients

Sweetcorn, tinned, drained

80 g

Lettuce

½ individual, little gem lettuce, leaves shredded

Cabbage

200 g, red cabbage, shredded

Cherry Tomatoes

100 g, halved

Red pepper

½ medium, thinly sliced

Radish

2 medium, trimmed and cut into matchsticks

Tuna in spring water, drained

1 can(s), medium, drained

Coriander, fresh

2 tablespoon(s), chopped

Lime Juice, Fresh

1 tablespoon(s)

Soy Sauce

2 teaspoon(s), light

Sesame Oil

1 teaspoon(s)

Chilli, green or red

1 individual, deseeded and finely chopped

Instructions

  1. Combine the sweetcorn, lettuce leaves, cabbage, tomatoes, pepper, radishes, tuna and coriander in a large bowl and set aside.
  2. In a small jug, whisk together the remaining ingredients to make a dressing.
  3. Drizzle the dressing over the salad and toss to coat. Divide between bowls and serve.

Notes

Like your dressing with a kick? Leave the seeds in the chilli before chopping it, for extra heat.
