Super-quick to prepare and full of zingy flavours, this colourful salad makes brilliant use of prawns, fresh mango and herbs

Ingredients

Rice Noodles, dry

75 g

King Prawns, Cooked

150 g, peeled

Carrots, raw

1 medium, peeled, cut into very thin strips

Cucumber

½ individual, peeled into very thin strips

Mango

½ medium, cut into thin wedges

Chilli, Green or Red

1 individual, deseeded, finely sliced

Mint, Fresh

2 tablespoons, finely chopped

Coriander, fresh

2 tablespoons, finely chopped

Lime Juice, Fresh

20 ml

Sesame Oil

2 teaspoons, toasted

Honey

2 teaspoons, level, clear

Instructions

  1. Cook the noodles to pack instructions, then drain and refresh in cold water. Drain well then transfer to a large bowl.
  2. Add the prawns, veg, mango, chilli and herbs to the bowl; toss to combine.
  3. Whisk together all the dressing ingredients in a jug, then drizzle over the salad. Season to taste, then serve.

Notes

If you don’t fancy the heat of fresh chilli, swap it for 1 tbsp sweet chilli sauce, for an extra 1 SmartPoint per serving.
