Chicken & soba noodle salad with mango

For a quick noodle dish that’s packed with Asian-inspired flavours, this one is hard to beat. Using ready-cooked chicken makes it super speedy.


Ingredients
Chicken breast, skinless, grilled
400 g
Chilli, green or red
1 individual, red, deseeded and finely chopped
Lime Juice, Fresh
4 tablespoon(s)
Coriander, fresh
1 tablespoon(s)
Blue Dragon Soba Noodles
200 g, dry
Thai Fish Sauce
1 tablespoon(s)
Soy Sauce
2 tablespoon(s)
Garlic
1 clove(s), finely chopped
Root Ginger
1 teaspoon(s), finely chopped
Caster Sugar
½ teaspoon(s)
Mango
300 g, peeled, destoned and sliced
Peppers, all types
1 medium, sliced
Watercress
100 g
Unsalted Peanuts
20 g, toasted
Instructions

Put the chicken in a small bowl, add the chilli, juice of 1 lime and half of the coriander, then mix well.

Bring a large pan of water to a boil, add the soba noodles and simmer for 5 minutes, then drain.

In a small bowl, mix the remaining lime juice with the fish sauce, soy sauce, garlic, ginger and sugar. Stir into the drained noodles, then add the mango, pepper, watercress and chicken, and mix everything together. Divide the noodles between 4 plates and sprinkle over with the remaining coriander and peanuts to serve.
