Chicken with pesto pasta

Wholewheat Pasta, dry
Medium fat soft cheese
2 tablespoons, level
Chicken breast, skinless, grilled
4 individual, medium, diced
150 g, young leaf
1 tablespoons, chopped, plus extra leaves to garnish
- Cook the pasta according to pack instructions. Drain, reserving the pasta water. Return the pasta to the pan.
- Add the soft cheese, pesto and a ladleful of the pasta water. Stir until the cheese melts and the pasta is coated.
- Stir through the cooked chicken, spinach and basil, until the spinach has wilted. Season to taste, then serve.
