Ingredients

Wholewheat Pasta, dry

250 g

Medium fat soft cheese

100 g

Green Pesto

2 tablespoons, level

Chicken breast, skinless, grilled

4 individual, medium, diced

Spinach

150 g, young leaf

Basil, fresh

1 tablespoons, chopped, plus extra leaves to garnish

Instructions

  1. Cook the pasta according to pack instructions. Drain, reserving the pasta water. Return the pasta to the pan.
  2. Add the soft cheese, pesto and a ladleful of the pasta water. Stir until the cheese melts and the pasta is coated.
  3. Stir through the cooked chicken, spinach and basil, until the spinach has wilted. Season to taste, then serve.
