These tasty chicken bites are far healthier than the kind you might buy ready-frozen - and they are really easy to make.

Chicken breast, skinless, raw

500 g, (1lb 2oz) boneless

Polenta, Dry

110 g, (4oz) instant


¼ teaspoons, level

Black pepper

1 teaspoons

Egg, whole, raw

1 medium, raw

  1. Preheat the oven to Gas Mark 6 / 200°C / 400°F. Spray 2 baking sheets with low fat cooking spray.
  2. Cut the chicken into bite-sized pieces. Mix the polenta and paprika together in a bowl and season with pepper.
  3. Beat the egg and water together in a bowl and add a few chicken pieces. Lift them out and roll them in the polenta. Arrange on the baking sheets. Repeat with the remaining chicken pieces.
  4. Bake for 15-20 minutes until golden brown and crisp. To check that they are cooked through, insert a sharp knife into the middle – there should be no pink juices. If there are, cooked for a few more minutes.
