No roasting needed, use some leftover chicken or pick up a rotisserie chicken and a few basic ingredients come together to create this satisfying salad.

Ingredients

Reduced Fat Mayonnaise

60 g

0% fat natural Greek yogurt

2 tablespoon(s)

Lemon Juice, Fresh

2 tablespoon(s)

Lemon

1 zest(s) of 1

Parsley, fresh

2 tablespoon(s), chopped

Red onion

½ medium, chopped

Cumin seeds

1 teaspoon(s), level, crushed

Chicken breast, skinless, grilled

280 g

Celery, Raw

2 stick(s), thinly sliced, leaves reserved

Grapes, Black or White

150 g, halved

Salad leaves

2 handful serving

Instructions

  1. In a large bowl, stir together the mayonnaise, yogurt, lemon zest and juice, parsley, onion, cumin seeds and a pinch of salt and pepper. Stir in the chicken, celery, and grapes.
  2. Divide the salad leaves among 2 plates, then top with the chicken mixture.
