Chicken fajita dinner
Calorie controlled cooking spray
Chicken breast, skinless, raw
1 medium, cut into strips or chunks
½ medium, sliced
1 medium, sliced
2 tablespoons, heaped
Fresh Salsa (no oil)
⅛ medium, wedge
- Mist a nonstick frying pan with cooking spray, place over a medium heat and add the chicken. Cook for 5 minutes or until browned, then stir in the peppers and fajita seasoning, season to taste and cook for a further 8-10 minutes, or until the peppers are just softened and lightly golden.
- Serve the chicken and peppers with warmed refried beans and the fresh salsa. Garnish with fresh coriander and a lime wedge.
