Chicken fajita dinner

Whip up this dinner from leftover cooked chicken breast and roasted peppers.


Ingredients
Calorie controlled cooking spray

Fajita seasoning
1 tablespoon(s)
Chicken breast, skinless, raw
1 medium, cut into strips or chunks
Red pepper
½ medium, sliced
Black beans in water
½ can(s), medium, drained
Green pepper
1 medium, sliced
Fresh Salsa (no oil)
2 tablespoon(s)
Lime
⅛ medium, wedge
Coriander, fresh
1 tablespoon(s)
Instructions

Mist a nonstick frying pan with cooking spray, place over a medium heat and add the chicken. Cook for 5 minutes or until browned, then stir in the peppers, beans and fajita seasoning, season to taste and cook for a further 8-10 minutes, or until the peppers are just softened and lightly golden.

Serve the chicken and peppers with warmed refried beans and the fresh salsa. Garnish with fresh coriander and a lime wedge.
