This easy version of the classic double-decker sandwich is spiced up with salsa and chipotle paste.

Chicken breast, skinless, raw

Chipotle paste

Salsa sauce dip, mild

Preheat the grill to medium-high. Coat the chicken breast with the chipotle paste and grill for 10 minutes, turning once, until cooked through. Set aside to rest for a few minutes.

Toast the bread until golden, then spread the mayonnaise over 2 of the slices.

Slice the cooked chicken and sandwich between the 2 slices of toast with the mayonnaise. Spoon the tomato salsa onto the top of the sandwich, then add the salad leaves and sliced avocado. Top with the final piece of toast and cut in half to serve.
