Chicken Caesar salad

This is an ideal version of an old favourite for a summer lunch; the secret is it's lighter dressing.


Ingredients
Lettuce
1 individual, Romaine
Garlic
1 clove(s)
Low Fat Soft Cheese
50 g
Low Fat Natural Yogurt
100 g
Anchovies in oil, drained
10 g
Chicken breast, skinless, grilled
200 g
Cherry Tomatoes
6 individual
Croutons
40 g
Parmesan Cheese
4 teaspoon(s), grated, Black pepper to serve
Instructions

Break the lettuce into separate leaves and tear these into pieces. Wash well in the colander; drain and share between 2 plates or bowls.

Cut the garlic clove in half, then rub the cut surfaces around the inside of a mixing bowl - you only want a hint of garlic. Add the soft cheese and beat it until smooth; then add the yogurt and anchovy paste, mixing until combined. Tear in the chicken and toss to coat it in the dressing.

Arrange the dressed chicken over the lettuce leaves. Halve the tomatoes and add them to the salad. Scatter an equal amount of croutons over each portion and sprinkle 2 teaspoons of Parmesan cheese over each serving. Season with a little black pepper and serve.
