Chicken, broccoli & tortellini soup
Fresh Chicken Stock
1 medium, diced
1 clove(s), crushed
50 g, small florets

Chicken breast, skinless, grilled
80 g, chopped
1 large, diced
1½ tablespoons, grated
1 tablespoons, chopped
- In a small saucepan over a high heat, bring the stock, carrot and garlic to a boil. Then, stir in the broccoli and tortellini. Reduce heat to medium-low and simmer for 2 minutes.
- Add the chicken and tomatoes; simmer until the tortellini and broccoli are tender, about 3 minutes. Transfer to a bowl and garnish with Parmesan and parsley.
