Tasty and simple chicken and bean burritos with a mango salsa. Perfect Friday food!

Ingredients

Calorie controlled cooking spray

Onion(s)

1 medium, sliced

Chicken breast, skinless, grilled

4 individual, medium, chopped

Fajita Seasoning

20 g

Black Beans in Water

1 can(s), medium, drained

Mango

1 medium, diced

Cucumber

1 portion(s), medium, diced

Coriander, fresh

1 tablespoons, chopped

Tortilla wrap(s)

4 medium

Lime(s)

1 medium, juice of

Instructions

  1. Heat a wok or large frying pan and mist with cooking spray. Add the onion and stir-fry until soft. Add the chicken and fajita seasoning and stir-fry for 4-5 more minutes, then add the beans, season with salt and pepper and heat through.
  2. To make the salsa, mix together the mango, cucumber and coriander.
  3. Wrap the tortillas in foil and warm in the oven (preheated to 200°C, fan 180°C, gas mark 6) for about 5 minutes, or microwave for 10-20 seconds, without using foil. Put a warm tortilla on each serving plate and top with the mango salsa, followed by the chicken and bean mixture. Squeeze over fresh lime and roll up to serve.
