Chicken & bean tortillas with mango salsa

1 medium, sliced
Chicken breast, skinless, grilled
4 individual, medium, chopped
Black Beans in Water
1 can(s), medium, drained
1 medium, diced
1 portion(s), medium, diced

- Heat a wok or large frying pan and mist with cooking spray. Add the onion and stir-fry until soft. Add the chicken and fajita seasoning and stir-fry for 4-5 more minutes, then add the beans, season with salt and pepper and heat through.
- To make the salsa, mix together the mango, cucumber and coriander.
- Wrap the tortillas in foil and warm in the oven (preheated to 200°C, fan 180°C, gas mark 6) for about 5 minutes, or microwave for 10-20 seconds, without using foil. Put a warm tortilla on each serving plate and top with the mango salsa, followed by the chicken and bean mixture. Squeeze over fresh lime and roll up to serve.
