Chicken breast, skinless, raw
175 g, boneless, cut into 2.5 cm cubes
Chorizo Sausage
175 g, spicy
Onion
1 small, sliced
Peppers, all types
1 medium, (red or green) deseeded and chopped
Baby corn, canned
100 g, halved
Okra
100 g, trimmed and sliced
Garlic
1 clove(s), crushed
Plain White Flour
1 tablespoon(s), level
Vegetable stock cube
1 cube(s), (use chicken stock cube to make 1/2 pint)
Tinned Tomatoes
400 g
Thyme, Dried
¼ teaspoon(s), level, dried
Salt
1 pinch, to taste
Black pepper
½ teaspoon(s)
Spring Onions
1 medium, green part only, chopped
Bay leaf, dry
1 teaspoon(s)
Instructions

Generously spray flameproof casserole with cooking spray. Add chicken and chorizo sausage and brown, stirring constantly, for 2 minutes.

Stir in vegetables and garlic. Sauté for 5 minutes.

Sprinkle with flour. Cook 1 minute. Stir in chicken stock and scrape up any brown bits from bottom of casserole.

Stir in tomatoes, bay leaf, thyme, salt and pepper. Simmer 20 minutes. Place in 4 bowls, sprinkle with spring onion and serve.
