Chia & coconut Bircher muesli with blueberry compote
Alpro Coconut Unsweetened Drink
Chia Seeds, dry
1 medium, cored and grated
½ teaspoons, level
1 teaspoons, level
Lemon Juice, Fresh
Plain Soya Yogurt with Coconut
- Put the porridge, coconut drink, chia seeds, apple and cinnamon into a bowl and mix well. Cover & chill overnight in the fridge.
- The next day, put the agave syrup, blueberries and lemon juice in a small pan. Cover & cook for 5 minutes over a medium heat, until softened. Remove the lid and cook for 5 minutes until reduced and syrupy.
- Spoon the muesli into bowls and top with the yogurt and blueberry compote.
