Chia & coconut Bircher muesli with blueberry compote

Ingredients

Porridge oats

100 g

Alpro Coconut Unsweetened Drink

300 ml

Chia Seeds, dry

15 g

Apple

1 medium, cored and grated

Ground Cinnamon

½ teaspoon(s), level

Agave Syrup

1 teaspoon(s), level

Blueberries

200 g

Lemon Juice, Fresh

1 tablespoon(s)

Plain soya yogurt with coconut

Instructions

Put the porridge, coconut drink, chia seeds, apple and cinnamon into a bowl and mix well. Cover & chill overnight in the fridge.

The next day, put the agave syrup, blueberries and lemon juice in a small pan. Cover & cook for 5 minutes over a medium heat, until softened. Remove the lid and cook for 5 minutes until reduced and syrupy.

Spoon the muesli into bowls and top with the yogurt and blueberry compote.
