Olives, in Brine
50 g, black, pitted, drained
Capers, in Brine
1 teaspoons, drained and rinsed
Vinegar, All Types
1 teaspoons, red wine
Roasted Red Peppers in brine, drained
60 g, drained weight
- Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the wrap on a small baking tray and mist all over with cooking spray. Bake for 5 minutes.
- Meanwhile, put the olives, capers, olive oil and red wine vinegar into a mini food processor, season well and pulse until very finely chopped but not quite forming a paste.
- Spread the olive mixture over the wrap, leaving a 2cm border, then top with the peppers and artichokes. Return to the oven and cook for 10 minutes, then serve topped with the rocket.
