Light and low in fat and calories, these tasty tuna and vegetable skewers are just right for light eating.

Ingredients

Garlic

1 clove(s), finely chopped

Lemon

1 medium, finely grated zest and juice of

Soy Sauce

1 tablespoon(s)

Coriander, fresh

1 tablespoon(s), chopped

Tuna, raw

400 g, fillet, cut into chunks

Courgette

2 medium, sliced

Red pepper

1 medium, deseeded and cut into chunks

Yellow pepper

1 medium, deseeded and cut into chunks

Cherry Tomatoes

Instructions

  1. Put garlic, lemon zest, lemon juice, soy sauce and coriander into a bowl (not a metal one). Add tuna chunks, stirring to coat. Cover and marinate for 20 minutes. At the same time, soak 8 wooden kebab sticks in hot water.
  2. Thread tuna chunks and vegetables onto soaked wooden sticks, alternating the pieces. Preheat barbecue or chargrill pan. Spray kebabs with low fat cooking spray, then cook over coals or on char-grill pan for 6-8 minutes, turning often, until cooked. Serve with salad.
