Gin
60 ml
Honey
1½ tablespoon(s), level
Egg white, raw
1 individual
Lemon Juice, Fresh
2 tablespoon(s), (About 2 lemons)
Instructions

Put the chamomile tea bag in a heatproof jug, pour over 100ml boiling water and let stand for 10 minutes. Remove and discard the tea bag, then stir in honey and set aside to cool.

Fill a cocktail shaker with ice, then add the chamomile tea, gin, 1 large egg white, and lemon juice. Shake vigorously, then strain into 2 coupe glasses.

Serve with dried chamomile flowers scattered over the top, if you like.
