Chamomile tea sour

- Put the chamomile tea bag in a heatproof jug, pour over 100ml boiling water and let stand for 10 minutes. Remove and discard the tea bag, then stir in honey and set aside to cool.
- Fill a cocktail shaker with ice, then add the chamomile tea, gin, 1 large egg white, and lemon juice. Shake vigorously, then strain into 2 coupe glasses.
- Serve with dried chamomile flowers scattered over the top, if you like.
To make this a mocktail, swap the gin with the same amount of alcohol-free spirit (such as Seedlip Garden 108).
