Combine the juice, almond milk, carrot, frozen pineapple, agave, ginger, vanilla and 4 ice cubes in a blender; blitz briefly until thick and creamy. Spoon into a bowl; top with the fresh pineapple chunks, coconut and sunflower seeds.
