White Self Raising Flour

2 tablespoon(s), level

Ground Cinnamon

½ teaspoon(s), level

Mixed Spice

¼ teaspoon(s), level

Banana

1 medium, mashed

Carrots, raw

20 g, peeled and finely grated, plus extra to garnish

Egg, whole, raw

1 medium, raw

Honey

1 teaspoon(s), level

0% fat natural Greek yogurt

Orange

¼ zest(s) of 1, for decoration

Instructions

  1. Mist the inside of a 180ml capacity microwave-safe mug with cooking spray.
  2. In a bowl, combine the flour, cinnamon, mixed spice, banana, carrot, and the egg. Spoon into the mug, then microwave on high* for 2 minutes 30 seconds or until set.
  3. Stir the honey through the yogurt and spoon over the cake. Sprinkle with grated orange zest.
