Bring a bit of heat to midweek with this dish inspired by the American South

Ingredients

Olive Oil

1 tablespoon(s)

Beef sirloin steak, lean, raw

620 g, 4 x 155g thin cut

Cajun seasoning

1 tablespoon(s)

Onion

1 small, finely diced

Green pepper

1 medium, deseeded and diced

Red pepper

1 medium, deseeded and diced

Celery, Raw

2 stick(s), trimmed and finely chopped

Garlic

2 clove(s), finely sliced

Cauliflower rice

600 g, 2 x 300g packs

Coriander, fresh

1 tablespoon(s), roughly chopped, to serve

Instructions

  1. Heat a large nonstick frying pan over a medium-high heat. Drizzle half the oil over the steaks, then rub in the Cajun spice mix and season well. Sear the steaks for 1-2 minutes on each side for medium, or until cooked to your liking – you may need to do this in batches. Transfer to a plate and set aside to rest for 10 minutes.
  2. Meanwhile, wipe the frying pan clean then add the remaining oil. Cook the onion, peppers and celery for 6-8 minutes, until soft. Add the garlic and cook for a further minute, then add the cauliflower ‘rice’ and cook for an additional 2-3 minutes.
  3. Serve the cauliflower ‘rice’ topped with the steaks and garnished with the coriander.

Notes

Want more heat? Add 1 tsp cayenne pepper and 1 tsp black pepper to the veg before stirring in the ‘rice’.
