Paprika

King Prawns, Raw

300 g

Olive Oil

Instructions

  1. In a small bowl, mix together the paprika, oregano, salt, cayenne pepper and black pepper. Toss half the spice mixture with the prawns and set aside.
  2. Heat 1 tbsp of the oil in a frying pan over a medium-high heat. Add the onion and cook for 3 minutes until softened. Add the garlic and cook for a further minute. Add the peppers, and the remaining spice mixture, cook for 4 -5 minutes until lightly golden and tender. Transfer mixture to a bowl, cover and set aside.
  3. Using the same pan, add the remaining oil and place over a medium-high heat. Add the prawns in a single layer. Cook for 4 minutes, turning halfway through, until prawns are cooked. Add the pepper mixture to the pan and toss to combine and heat through.
  4. Serve with the parsley sprinkled over the prawns and lemon wedges on the side.
