Chicken breast, skinless, raw

2 medium, flattened to a thickness of about 1cm

Cajun seasoning

10 g

Lime Juice, Fresh

20 ml

Mexican cheddar with mixed peppers

Salad leaves

Red onion

½ small, finely sliced

Carrots, raw

½ medium, peeled and grated

Courgette

1 medium, peeled into ribbons

Cherry Tomatoes

5 individual, quartered

Sweetcorn, tinned, drained

Fresh Salsa (no oil)

Reduced fat soured cream

1 tablespoon(s), level

Coriander, fresh

Instructions

  1. Preheat the grill to medium. Mist a nonstick griddle pan with the cooking spray and set over a medium heat. Mist the chicken with spray, then coat in the Cajun seasoning. Griddle for 3-4 minutes each side, until cooked through. Pour two-thirds of the lime juice onto the chicken, then top with the cheese. Put under the grill for 1-2 minutes, until the cheese has melted.
  2. Meanwhile, toss the salad leaves, onion, carrot, courgette, tomatoes, sweetcorn and remaining lime juice in a large bowl. Top with the chicken and serve with the salsa, soured cream and coriander.
