Vegetarian Parmesan Style Hard Cheese
- Preheat the oven to 200°C, fan 180°C, gas mark 6. Pat the chickpeas dry with kitchen paper and put into a large bowl. Toss the chickpeas with the oil, pepper and 20g of the cheese, then spread them out on a large baking tray.
- Bake for 30-35 minutes, shaking the tray halfway though, until the chickpeas are crisp and golden. Allow to cool completely, then serve with the remaining grated cheese scattered over.
