Ingredients

Butternut Squash

1 whole, medium, peeled and deseeded (800g peeled weight)

Garlic

1 clove(s), crushed

Sage, Dried

2 teaspoon(s), level

Chilli flakes

1 teaspoon(s), level

Calorie controlled cooking spray

Vegetarian parmesan style hard cheese

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6.
  2. Cut the butternut squash into wedges and put in a large roasting tin with the crushed garlic clove, sage and chilli flakes. Mist with cooking spray and toss to combine.Roast for 35-40 minutes until tender and golden.
  3. Remove from the oven, sprinkle over the cheese. Return to the oven for a further 8 minutes, then serve.
