Goats cheese, sage & butternut squash pies

A winning combination of crisp pastry, tangy goat’s cheese and sweet butternut squash.


Ingredients
Butternut Squash
1 whole, small, 1 small, peeled and cut into 2cm pieces
Lettuce
4 leaf/leaves, small, mixed salad leaves, to serve
Medium Fat Soft Goat's Cheese
125 g
Sage, fresh
1 g, 6 leaves, chopped
Filo Pastry
4 sheet(s), large
Calorie controlled cooking spray

Preheat the oven to 200/ fan 180C. Place the butternut squash on a wide baking sheet, mist with low calorie spray and season. Roast for 20 minutes, then turn over and roast for another 20-25 minutes until soft and golden. Once the butternut squash has roasted, remove from the oven and leave to cool slightly

Meanwhile, cut each sheet of filo pastry widthways into 3 equal pieces and use to line the holes of a deep 12-hole muffin tray. Fill with the cooled roasted butternut squash, goat’s cheese and sage, then bring up the sides of the filo pastry and scrunch together at the top to create parcels. Mist with cooking spray and bake for 10 minutes, until golden.

Serve 3 pies per person, with the green salad on the side.
