Ingredients

Olive Oil

2 teaspoon(s)

Onion

1 medium, finely diced

Garlic

2 clove(s), crushed

Tomato Purèe

1 tablespoon(s), level

Passata

200 g

Cherry Tomatoes

400 g

Butter Beans, cooked

1 can(s), large, drained

Light feta cheese

100 g

Basil, fresh

2 tablespoon(s), chopped

Instructions

  1. Heat the oil in a large frying pan over a medium-high heat. Add the onion and garlic, and sauté for 2 to 3 minutes. Add the tomato paste and cook, stirring for 1 minute. Stir in the passata and cherry tomatoes, then season to taste with salt and pepper. Simmer over low heat until the tomatoes start to break down, 5 to 10 minutes.
  2. Add the beans to the frying pan and stir to heat through. Top with the cheese and garnish with basil.
