Put down that pizza menu. This easy flatbread is topped with fresh, zesty ingredients that’ll kick your usual takeout to the kerb.

Ingredients

Plain flatbread

1 individual, medium, wholemeal

Calorie controlled cooking spray

Passata

30 g

King Prawns, Raw

50 g, peeled

Broccoli, raw

75 g, tenderstem, cut into 5cm lengths

Light Mozzarella

30 g, torn into chunks

Chilli, green or red

½ individual, deseeded and thinly sliced

Olive Oil

Instructions

  1. Preheat the grill to medium-high. Put the flatbread on a baking tray, lightly mist with cooking spray and grill for 1-2 minutes on each side until crisp.
  2. Spread the flatbread with the passata. Top with the prawns, broccoli, mozzarella and half the chilli. Grill for 6 minutes or until the cheese has melted and the prawns are cooked through.
  3. Whisk together the oil, lemon zest, juice and remaining chilli. Top the pizza with the rocket leaves and drizzle over the oil.
