Broad beans, boiled
300 g
Garlic
1 clove(s), crushed
Spring Onions
2 medium, thinly sliced
Medium Fat Soft Goat's Cheese
60 g
Olive Oil
1 tablespoon(s)
Lemon
½ zest(s) of 1
Lemon Juice, Fresh
1 tablespoon(s)
Mint, Fresh
2 tablespoon(s)
Instructions

Cook the broad beans to pack instructions. Drain, pod, and refresh under cold water.

In a food processor, blitz the garlic, spring onions, goats’ cheese, olive oil, lemon zest and juice and most of the mint in a food processor and blitz to a coarse paste. Transfer to a serving bowl, season then chill for 1 hour.

Serve topped with remaining mint leaves.
