Ingredients

Broad beans, frozen, boiled

300 g

Garlic

1 clove(s), crushed

Spring Onions

2 medium, thinly sliced

Medium Fat Soft Goat's Cheese

60 g

Olive Oil

1 tablespoons

Lemon(s)

½ zest(s) of 1

Lemon Juice, Fresh

1 tablespoons

Mint, Fresh

2 tablespoons

Instructions

  1. Cook the broad beans to pack instructions. Drain, pod, and refresh under cold water.
  2. In a food processor, blitz the garlic, spring onions, goats’ cheese, olive oil, lemon zest and juice and most of the mint in a food processor and blitz to a coarse paste. Transfer to a serving bowl, season then chill for 1 hour.
  3. Serve topped with remaining mint leaves.

Notes

Serve with veggie crudités or toasted pittas.
