You can fill these little boats with anything from cottage cheese to peppers and spices, whatever you like really!

Ingredients

White petits pains

4 individual

Mushrooms

2 medium, diced

Egg, whole, raw

4 medium, raw, beaten

Wafer thin ham

2 slice(s), chopped

Chives, Fresh

2 tablespoon(s), chopped

Parsley, fresh

2 tablespoon(s), chopped

Preheat the oven to 180C, 160C fan, gas 4. Make a cut in the top of each roll and scoop out enough bread to make a well. Place the rolls onto a baking sheet and bake for 10 minutes, until golden and crispy.

Meanwhile, mist a pan with the cooking spray, set over a medium heat and cook the mushroom for 3-4 minutes, until golden. Add the ham, reduce the heat and pour in the egg. Season and cook, stirring occasionally, for 2-3 minutes until almost set. Stir through the herbs.

Fill the hot rolls with the egg mixture and serve immediately.
