- Put the eggs in a pan of cold water, bring to the boil, then reduce to a simmer for 3 minutes. Drain.
- Meanwhile, make 2 sandwiches with the bread and smoked salmon. Mist a large, nonstick frying pan with cooking spray, add the sandwiches and cook over a medium heat, turning once, for 1-2 minutes. Cut into soldiers and serve with the eggs.
