This is the perfect TV snack to share with the family.

Ingredients

Calorie controlled cooking spray

4 spray(s)

Tortilla chips

135 g, blue corn

Pinto Beans, cooked

1 can(s), large, drained, drained and rinsed

Tomato

2 large, plum, chopped

Spring Onions

2 medium, trimmed and sliced

Sliced green jalapeños in brine

1 tablespoon(s), drained

Half fat Cheddar cheese

80 g, grated

Coriander, fresh

1 tablespoon(s), chopped

Lime

1 medium, wedges, to serve

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Mist a large baking tray with cooking spray.
  2. Arrange two-thirds of the tortilla chips on the prepared baking dish in a single layer. Top with the beans, tomatoes, spring onions, and jalapeños. Crush the remaining tortilla chips and scatter over the top, then scatter over the grated cheese.
  3. Bake for 15 minutes, until heated through and the cheese is melted. Scatter over the coriander and serve with the lime wedges on the side.

Notes

You can find blue corn tortilla chips online and in larger supermarkets, but if you can’t get hold of them, use regular corn tortilla chips instead.
